Hearty Winter Soup Recipe: Warm Up Your Soul


As the winter chill sets in, there's nothing more comforting than a bowl of hearty, homemade soup. Ingredients
  • 2 tablespoons olive oil
  • 1 onion, chopped

  • 1 cup green beans, trimmed and cut into 1-inch pieces

  • 6 cups chicken or vegetable broth
  • 2 cups cooked, shredded chicken (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups spinach or kale, chopped
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for serving, optional)

Instructions
1. Prepare the Vegetables
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic and sauté until fragrant, about 3 minutes.
  3. Add the sliced carrots, celery, and cubed potato. Cook for another 5 minutes, stirring occasionally.
2. Build the Soup Base
  1. Add the chopped zucchini, green beans, corn, and diced tomatoes to the pot.
  2. Pour in the chicken or vegetable broth, bringing the mixture to a boil.
3. Simmer and Season
  1. Reduce the heat to low and let the soup simmer for about 20 minutes, or until the vegetables are tender.
  2. Stir in the cooked, shredded chicken (if using), dried thyme, basil, oregano, salt, and pepper. Adjust the seasonings to taste.
4. Add Greens and Serve
  1. Stir in the chopped spinach or kale and let it wilt in the hot soup for a few minutes.
  2. Ladle the soup into bowls and garnish with fresh parsley and grated Parmesan cheese, if desired.
