Ingredients
For the Couscous:
  • 1 cup couscous
  • 1 cup chicken or vegetable broth
  • 1 tablespoon olive oil
  • Salt, to taste

  • 2 chicken breasts, steak, or tofu for a vegetarian option
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

For the Vegetables:
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Pineapple Salsa:
  • 1 cup fresh pineapple, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and finely chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions
1. Prepare the Couscous
  1. In a medium saucepan, bring the chicken or vegetable broth to a boil.
  2. Remove from heat and stir in the couscous and olive oil.
  3. Cover and let it sit for 5 minutes, then fluff with a fork and season with salt to taste.

2. Cook the Meat
  1. Season the chicken breasts, steak, or tofu with olive oil, salt, pepper, garlic powder, and paprika.
  2. Heat a skillet over medium-high heat and cook the meat for 6-7 minutes per side (for chicken and steak) or until cooked through and juicy. If using tofu, cook until golden brown and crispy.
  3. Remove from the skillet and let rest for a few minutes before slicing.

3. Sauté the Vegetables
  1. In the same skillet, add another tablespoon of olive oil and heat over medium heat.
  2. Add the mixed vegetables and sauté for 5-7 minutes, or until tender and slightly caramelized. Season with salt and pepper to taste.

4. Make the Pineapple Salsa
  1. In a medium bowl, combine the diced pineapple, red onion, cilantro, jalapeño, and lime juice.
  2. Season with salt and pepper to taste, and mix well.
