Quick and Healthy Meal: Grilled Chicken with Quinoa, Broccoli, and Cucumber Salsa

Ingredients
For the Grilled Chicken:
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste

For the Quinoa:
  • 1 cup quinoa, rinsed
  • 2 cups water or chicken broth
  • Salt, to taste

For the Broccoli:
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Cucumber Salsa:
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions
1. Prepare the Grilled Chicken
  1. Preheat your grill or grill pan to medium-high heat.
  2. Brush the chicken breasts with olive oil and season with garlic powder, paprika, salt, and pepper.
  3. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from the grill and let rest for a few minutes before slicing.


2. Cook the Quinoa
  1. In a medium saucepan, bring the water or chicken broth to a boil.
  2. Add the rinsed quinoa and a pinch of salt. Reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the liquid is absorbed.
  3. Fluff the quinoa with a fork and set aside.

3. Roast the Broccoli
  1. Preheat your oven to 400°F (200°C).
  2. Toss the broccoli florets with olive oil, salt, and pepper.
  3. Spread the broccoli on a baking sheet and roast for 15-20 minutes, or until tender and slightly crispy.

4. Make the Cucumber Salsa
  1. In a medium bowl, combine the diced cucumber, red onion, cilantro, and lime juice.
  2. Season with salt and pepper to taste, and mix well.

5. Assemble the Meal
  1. Divide the cooked quinoa between two bowls.
  2. Top each bowl with the roasted broccoli and sliced grilled chicken.
  3. Spoon a generous amount of cucumber salsa over the chicken.
